High spring arrives, unfurling its clear air. Skies open toward the sun. The beauty that accompanies change shows boldly in every bloom and bird, inviting us to join the profusion.
Honor the transition into Spring and Summer by brewing up this delicious herbal beverage made with the power of the sun. Take a walk in nature or frequent your farmer’s market, collect any medicinal herbs and edible flowers that you can identify, and harness the power of the sun to make a batch of Sun Tea.
Recommended Herbs, Flowers & Botanicals:
- Lemon Balm
- Red Raspberry Leaf
- Wild Violet
- Fresh Ginger
- Orange Slices
Add your ingredients to a jar and top with fresh water. Place your “sun tea” in a sunny windowsill, or outside in the direct sunlight. Steep for at least three hours, up to a full day. Strain and enjoy as-is or make sun tea ice cubes by pouring the infusion into an ice tray and freezing overnight. We like using the sun tea ice cubes in a glass with cold kombucha or kefir soda for a refreshing, herbal drink that’s grounded, yet uplifting.
